How to; Cook the Perfect Christmas Ham

My favourite memory of Christmas is the whole family chattering / squabbling in the kitchen whilst my beloved dad prepares the ham. Christmas in our house is always chaos but it remains my favourite holiday – and the ham plays a big role as to why!
I thought; what better recipe to share than my dear old dad’s special ham roast recipe?!
Ingredients:

Mealie Meal (to bake the ham)
Ham (see “how to pick the perfect ham” for ideal size)
Cherries & Cloves for garnish
For the basting mix:
1 tin pineapple chunks (juice for basting, chunks for garnish)
2 teaspoons mustard powder
2 tablespoons old fashioned brown sugar
Pre-heat oven to 180°C
And now for the fun part:
Cover ham in a thick Mealie Meal paste & bake for one hour per kg
Remove the Mealie Meal crust and score fat 2cm diagonally
Place a clove in each score point (this is always my sister & I’s task)
Mix together the juice from the tinned pineapple chunks, mustard powder & the old fashioned brown sugar.
Mix until the sugar is dissolved.
Place ham back in the oven and baste every 15 minutes for 45 minutes.
Use the grill to brown the glazing.
Add your pineapple chunks and cherries to decorate

TIP:
Make sure the ham fits in your oven before you order it! And make sure you have alternative cooking methods ready – should ZESA decide to go on holiday as well.
